Here's a beautiful yet often overlooked song, the final track of Bad Company's debut album.
Talk about minimalistic, only 7 tracks make up this entire song, by far the least I've ever used in a production. Everything was recorded via a R0DE NT1-A condenser microphone (save the keyboards), and using only a single guitar.
Sometimes less is indeed more.
